A Healthy Side Dish

Mango Avocado Salad

Soak a 1/2 thinly sliced small white onion in ice water, drain, and pat dry.  

Mix 2 T lime juice, 1 T orange juice and 1/2 teaspoon honey in a bowl along with 2 T olive oil.  Add 1/2 head of chopped green leaf lettuce, or possibly spinach, 1 diced mango, 1/2 diced English cucumber and the onion. Season with salt and pepper and toss.  

You can make variations with dried cranberries, fresh blueberries or raspberries. Or to totally change the mixture, add shrimp.
